Last year Me and Rohit stayed up till 3 am to make this cake so that we could surprise Ryan in the morning. It was his 4th birthday. Ryan loves cakes, birthdays ,decorations and we decided to do it all. It was a quiet celebration with just the three of us but we wanted the grand party feels. It was worth the effort because he loved it. My heart goes out to all the kids who are unable to have their grandparents/cousins and friends over for birthdays due to the Corona scare. I so wish this pandemic would just end.  

 I made Prawns Biriyani for lunch because Ryan is a "biriyani boy". We sometimes even call him that. But that day he was exhausted with all the video calls and wishes he has been getting throughout the day that he didn't really eat much of the biriyani.  I took the effort because it was his birthday but if it was any other day, I would have made some Kanji and payar and chilled.

The flavours lie between that of a sponge cake and a brownie. It is not as firm as a brownie yet not as lusciously soft as a sponge cake. After tasting this cake our sweet tooth has never been the same. I would eat one piece everyday if even a sliver of opportunity presented itself! We skipped breakfast and soothed our hunger pangs with this structurally marvellous aesthetically pleasing mud cake.   The top layer of decoration is done by dusting powdered sugar and cocoa powder. I cut out thin long strips of paper and placed it over the cake and dusted the powdered sugar first ( through a sieve). After that I gently (very gently) removed those strips. Repeated the same with paper placed in different angles and sprinkled cocoa powder. Remember you just need a thin layer of cocoa powder. Don’t overdo it. So once this is done Voila! Your cake just levelled up. I added some cherry 🍒 for an eye-catching look.

Ingredients
350gm dark chocolate broken into pieces
3/4th cup granulated sugar
185gm Butter
5 Eggs egg and yolk separated
1/3rd cup Flour sifted
Cocoa powder and powdered sugar for decoration

Method
1. Place chocolate , granulated sugar and butter in a heatproof bowl set over a saucepan of simmering water and heat, stirring until the mixture is smooth.
2.Remove the bowl and set aside to cool slightly
3. Beat in egg yolks one at a time beating well after each addition
4. Fold in flour
5.Place egg whites in a clean bowl and beat till stiff peaks for
6.Fold egg whites into the chocolate mixture
7.Pour mixture into a greased pan and bake for 45min at 180 degrees Celsius till the cake is cooked when tested with a toothpick. Set the cake aside to cool
8. Once cooled and Prior to serving dust cocoa powder and powdered sugar in designs on your choice lightly over the cake.
9. Makes one 9 inch round cake
